Ingredients Checklist
  1. 1 Onion, chopped
  2. 3 Garlic cloves, crushed
  3. 1 Green chilli , chopped
  4. 1 Carrot, peeled and grated
  5. 1 Eggplant, chopped
  6. 1 tbsp Vegetable oil
  7. 2 tbsp Water
  8. 1 tsp Ground cumin
  9. 1 tsp Ground coriander
  10. ½ teaspoon Turmeric powder
  11. 1 tsp Chilli powder
  12. 1 tsp Mustard seeds
  13. 1/4th cup Red lentils
  14. 1 cup home made Vegetable stock
  15. 1 zucchini Sliced
  16. 1 large Tomato, chopped
  17. for garnish Coriander
Preparation Mode
  • STEP 1

    Put oil , mustards seeds and chilli n sauté till mustard seeds crackle. Put the oinio , garlic, carrot and eggplant into a pan and saute.
  • STEP 2

    Add little bit of water to it. Cook for 5 minutes till the vegetables are tender.
  • STEP 3

    Uncover and stir in the spices. Cook for 1 minute, then stir in the lentils and stock. Bring to a boil and add zucchini and tomato.
  • STEP 4

    Cover and simmer gently for 20-25 minutes or till the lentils are cooked. Garnish with chopped coriander.
