Red Lentil And Vegetable Daal

Ingredients Checklist

1 Onion, chopped
3 Garlic cloves, crushed
1 Green chilli , chopped
1 Carrot, peeled and grated
1 Eggplant, chopped
1 tbsp Vegetable oil
2 tbsp Water
1 tsp Ground cumin
1 tsp Ground coriander
½ teaspoon Turmeric powder
1 tsp Chilli powder
1 tsp Mustard seeds
1/4th cup Red lentils
1 cup home made Vegetable stock
1 zucchini Sliced
1 large Tomato, chopped
for garnish Coriander

Method of Preparation

  1. Put oil , mustards seeds and chilli n sauté till mustard seeds crackle. Put the oinio , garlic, carrot and eggplant into a pan and saute.
  2. Add little bit of water to it. Cook for 5 minutes till the vegetables are tender.
  3. Uncover and stir in the spices. Cook for 1 minute, then stir in the lentils and stock. Bring to a boil and add zucchini and tomato.
  4. Cover and simmer gently for 20-25 minutes or till the lentils are cooked. Garnish with chopped coriander.
