Mustard and Olive Paste Chicken Skewers

Ingredients Checklist

30 gms Red Chilly Chilly Paste
15 gms Garlic Fresh
To Taste Salt
5 gms Black Salt
25 gms Curry Powder
15 gms Lemon Juice
50 gm Hung Curd
25 ml Mustard Oil
15 gms Fresh Oregano
180 gms Chicken Breast Boneless
30 gms Red Pepper
30 gms Broccoli

For the chilli mayo

50 gms Mayonnaise
15 gms Green Chilli
20 ml Condensed Milk
15 gms Gherkins
To taste Salt
To taste White Pepper

Method of Preparation

  1. For the marination
  2. Mix the red chilly paste, chopped garlic, salt, black salt, curry powder, mustard oil, lemon juice.
  3. Cube the chicken breast.
  4. To the hung curd add the freshly chopped oregano and the other ingredients mentioned above .
  5. To this add the cubed chicken breast.
  6. Mix well. And let it marinate for an hour.
  7. For the chilli mayo
  8. To the mayonnaise add the chopped green chilli, chopped gherkins.
  9. Add the condensed milk. Mix well.
  10. Season with salt and pepper.
  11. Cute the pepper into cubes.
  12. Make broccoli florets. Blanch in boiling water for a minute. Strain and put in cold water for a few minutes then strain.
  13. In a satay stick add the marinated chicken cubes, Red pepper and broccoli.
  14. In a pan heat oil. Cook for 5 mins.
  15. Serve hot with the Chilli mayo.
